Ginger Maple Chocolate Chip Cookies (V,GF)

Hi friends! I wanted to share the cookie recipe that I posted on my Instagram stories last weekend-- it's the perfect chewy spiced cookie. I adapted the recipe from Heart of a Baker's recipe so that these cookies are also gluten-free as well as vegan.

Ingredients:

  • 2 Tbsp. Candied ginger (chopped)

  • 1.5 tsp Ginger, ground

  • 1/3 cup pure maple syrup

  • Scant 1 cup King Arthur GF flour

  • 1 tsp Almond Extract

  • 1/4 tsp Baking Powder

  • 1.5 tsp Baking Soda

  • 1/2 cup coconut sugar

  • 1/2 cup Enjoy Life chocolate chips

  • 1/2 tsp Cinnamon, ground

  • 1/4 tsp Nutmeg, ground

  • 1/4 tsp Sea Salt

  • 1/2 cup Olive Oil


Directions:

  1. Pre-heat oven to 350 degrees F. Line 2 baking sheets with parchment and set aside

  2. In a large bowl, whisk together the flour, baking soda, baking powder, spices, and salt. Set aside.

  3. In a small bowl, whisk together the olive oil, coconut sugar, maple syrup and almond extract

  4. Add the wet mixture into the dry mixture and stir until well combined. Fold in the candied ginger and chocolate chips.

  5. Scoop by the tablespoon onto the prepared baking sheets and bake for 10-12 minutes, until golden brown. Start checking at 10 minutes to ensure you don't over-bake!
